Carrots
Carrots are a great source of beta-carotene, the orange pigment that converts to Vitamin A in the body, and the Vitamin A found in this powerhouse veggie also ensures good night vision and protects against eye issues related to aging. Need more reason to grab a bunch? Carrots also help the heart and immune system function properly. Raw carrots go great with hummus or a favorite dressing, and consider topping off foods with shredded carrots to add extra nutrition.
Fresh Herbs
Spring herbs like parsley, basil, mint, and dill are high in vitamins, minerals, and antioxidants. Add these to your cart and recipes, because research shows antioxidants in herbs may play a role in blood sugar control, bone health, blood pressure control, and cancer prevention. Plus, their bright color and bold flavor add both visual and taste appeal to the recipe.
Spinach
As with almost all produce, spinach is an excellent source of fiber and is full of vitamins and minerals, including potassium, which can help keep blood pressure in good control. Spinach can be steamed, sauteed or dehydrated and easily incorporated into smoothies, eggs, soups and casseroles.
Beets
The antioxidants that give beets their vibrant purple-red color are thought to reduce inflammation, promote heart health, and help our cells produce energy. Beets have an earthy flavor so try mixing with other spring favorites like feta and mint.
Asparagus
Asparagus is a good source of Vitamin K, which is used by the body for bone formation and blood clotting. It can be enjoyed raw, steamed, or grilled and fits into a variety of recipes well.
Now that you have spring produce added to your cart, see the recipe below from Markon to put those carrots to use right away.
