Mother’s Day Menu: Breakfast in Bed

Honey Coconut Whipped Cream French Toast

Ingredients for Honey Coconut Whipped Cream

  • 1 cup Shamrock Farms Heavy Whipping Cream
  • 2 tbsp confectioners sugar
  • 1 tbsp honey
  • ¼ cup coconut cream
  • ¼ tsp coconut extract

Ingredients for French Toast

  • ½ cup Shamrock Farms Heavy Whipping Cream
  • 1 cup Shamrock Farms Whole Milk
  • 8 slices brioche bread
  • 3 eggs
  • 1 tsp vanilla
  • 1 tbsp white sugar
  • Pinch of salt
  • Butter
    1. In a mixer fitted with the whisk attachment, add heavy whipping cream and coconut cream and whisk on low.
    2. Gradually increase speed to medium and add in honey, confectioner’s sugar and coconut extract.
    3. Keep the mixer on medium-high for about 2 minutes, or until stiff peaks form.
    4. Refrigerate until French Toast is done.
    5. To make the French Toast batter whisk together milk, ½ cup heavy whipping cream, eggs, sugar, salt and vanilla until you have a homogenous batter.
    6. Heat a large nonstick pan to medium and add about 1 tbsp butter. Once butter is sizzling it’s time to get your bread ready.
    7. Working in batches (and making sure to add more butter to the pan for each new piece) dip the brioche in the batter coating both sides. Allow excess to drip off.
    8. Add bread to pan and fry until golden on both sides, about 2 – 3 minutes.
    9. Plate your toast. Top with dollops of whipped cream.
    10. Add optional garnishes as you like – honeycomb, confectioners sugar, fresh berries, mint leaves – and enjoy!
