Sweet Potato Casserole Nachos

With all the flavors of sweet potato casserole and the fun of nachos in a single dish, this appetizer makes a great addition to a party. Substitute maple syrup for the brown sugar for a more flavorful dish.

By using sweet potato fries, you cut your preparation time in half. However, you can substitute fresh sweet potatoes for the fries. Peel the fresh sweet potatoes, slice them into fries, and bake at 400 degrees F until tender. Continue from step three of the recipe.

Ingredients

  • 1 20-oz bag of frozen sweet potato fries
  • 2 tbsp. melted butter
  • 2 tbsp. brown sugar or maple syrup
  • 1 10-oz bag of mini marshmallows
  • 1/4 cup chopped pecans (optional)
  • Zest of one orange
  • Ground nutmeg


Instructions

  1. Line a baking sheet with parchment paper. Lay the frozen sweet potato fries on the parchment in a single layer and bake according to the package directions.
  2. Remove the cooked sweet potato fries from the oven and turn the oven onto the broil setting.
  3. Toss the cooked fries with butter and brown sugar or maple syrup. Spread the coated fries back onto the parchment-covered baking pan.
  4. Cover the sweet potato fries evenly with the mini marshmallows.
  5. Sprinkle the chopped pecans over the marshmallows, if using.
  6. Broil the sweet potato fries until the marshmallows puff and turn lightly brown.
  7. Remove the fries from the oven and sprinkle the orange zest and nutmeg on top. Transfer it to a serving dish and serve this appetizer warm.


Sauteed Shiitake Mushrooms
 

Roasted mushrooms are a highly flavorful side for almost any holiday meal. These roasted shiitake mushrooms are a delicious stand-alone umami-filled side or work equally well as a pasta or rice topping. Ingredients

  • 1 lb. shiitake mushrooms, stems removed
  • 2 tbsp. olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400 degrees F.
  2. Line a baking sheet with aluminum foil or parchment paper.
  3. Toss the mushrooms with olive oil, garlic, salt, and pepper. Add salt and pepper to taste.
  4. Bake the mushrooms for 20 to 30 minutes or until golden brown.
  5. Serve hot.
